Ingredients
8 thick slices good quality bread (my favorite is Sourdough bread) 12 oz Gruyere cheese grated, left at room temperature 6 oz Mozzarella cheese grated, left at room temperature 2 yellow onions, peeled and cut into slices 1 cup mushrooms, medium cut into slices 1 teaspoon fresh thyme, roughly chopped 4 tablespoons butter 1 tablespoon olive oil salt and pepper to season
