If you love to grill as much as I do, you’ll definitely love this simple and delicious barbecue chicken skewers recipe that works great for dinners or any family & friends backyard gathering. These grilled chicken skewers are an all time barbecue crowd pleaser favorite dish. Tender chicken pieces flavored with olive oil, garlic and lime are one our staple dishes that will be on repeat all summer long.
You can add any vegetables you prefer to these skewers or even better make some separate skewers with your vegetable selection and serve with the meat. My favorite addition to these chicken skewers is a fresh made tzatziki on side and crispy pita bread. The chicken skewer marinade couldn’t be more simple. It’s just olive oil, minced garlic, chopped cilantro, lime juice, soy salt and honey, salt and pepper. You don’t need to marinate these skewers for a long time, around 30-40 minutes will do the job.
You can serve with side dishes like corn on the cob or potato salad, even a green salad will work well. Just a quick note! If you’re using wooden skewers, remember to soak them 10-30 minutes in warm water prior to start cooking.
