You only need four ingredients: corn tortillas, oil, salt. You can fry them in vegetable oil, canola oil or even olive oil, if preferred. If you’re looking at making baked tortilla chips, just cut the tortillas in quarters, brush with a mixture of oil and lime juice and bake for a couple of minutes. Trust me, once you’ve tried them you’ll never go and buy another bag of tortilla chips from shops again.
They are best when served fresh, out of the frying pan or oven. Allow them to cool completely and store them in an airtight container to keep them for up a week.
